What is Detroit-style pizza?

A primer on the pan-baked, cheese-to-the-edge, sauce-on-top pizza invented in Detroit in 1946.

Detroit-style pizza was born in 1946, at a restaurant called Buddy’s Rendezvous. The story goes that the owner, Gus Guerra, baked pies in blue-steel trays borrowed from the local automotive industry. That’s why the pan is rectangular, and why the style still has an industrial, workshop feel to it.

The three rules

Every proper Detroit pie obeys three rules. Break any one of them and it’s not Detroit-style. It’s something else.

  1. Pan-baked in a rectangular steel pan. The classic Detroit pan is 14 × 10 inches; ours are 8 × 10. The steel conducts heat into the dough aggressively; that’s what gives you the pillowy, airy crumb with a crisp bottom.
  2. Cheese to the edges. We push our mozzarella and cheddar blend right up to the walls of the pan. Where the cheese touches the hot steel, it caramelises into a crisp, brittle crust the style calls the frico edge. That crown is the whole point.
  3. Sauce on top. After the bake, not before. Bright tomato sauce laid across the pie in diagonal lines. Never under. Never mixed.

Why the corner piece?

Because the corner gets two walls of caramelised cheese instead of one. It’s the piece everybody fights over. At Dough Club we build every pizza knowing someone’s going to ask for the corner.

How it’s different from other pizzas

  • Neapolitan pizza is round, wood-fired, blisteringly hot, wet in the middle. Detroit-style is rectangular, pan-baked, dry-crispy on the bottom.
  • New York pizza is thin, foldable, big slices. Detroit-style is thick, airy, eaten in squares.
  • Sicilian pizza is also rectangular and pan-baked, but without the frico edge and usually with sauce under the cheese. Detroit-style is a cousin, not a twin.
